Last week I ran a poll on Instagram to see what recipes my followers would like to see, one of the most common answers was healthy, quick mid-week meals that don’t have too many ingredients.
I never use too many different ingredients in my cooking, I do like to keep things simple but still nutritious and tasty! One of the most common dishes I make for myself is pesto pasta, and no, I don’t make my own pesto, which makes this meal quick to cook up!
Ingredients (serves two people)
Whole wheat spaghetti 150g
Baby plum tomatoes 160g
Mozzarella 60g (approx. half a ball)
Rocket two handfuls
Green pesto 96g (half a small jar)
Salt and pepper to taste (optional)
Cook spaghetti according to packet instructions (I find whole wheat takes a little longer) and once the spaghetti is boiling, start preparing the rest of the meal.
Slice baby plum tomatoes in half and tear mozzarella into small pieces. Get prepared for serving with two bowls (or plates!) and rocket.
Drain pasta and return to pot, mix in pesto followed by baby plum tomatoes, rocket, mozzarella, seasoning and serve immediately.
