In aid of Pancake Day I decided to give my go-to breakfast of banana oat pancakes (original recipe here) a chocolate makeover! I like my pancakes to be filling which is why I include oats to bulk them out.
Ingredients (makes 2 large or 4 small)
1 medium egg
1 medium banana
25g cacao or 13g cocoa powder
Pinch of bicarbonate of soda/baking powder
Rapeseed oil (not necessary if you have a good non-stick pan)
Combine oats, banana (chopped), cacao/cocoa and egg in a blender until desired consistency is reached. You can also just mash all the ingredients in a bowl instead of a blender.
Leave to stand for 10-15 minutes to allow the mixture to thicken
In a frying pan heat oil over a medium heat
Pour half or a quarter of the mixture into the centre of the pan, flip once golden brown. If the heat is too high your pancake will burn on the outside and will be raw in the middle. Cook each pancake separately.
Add your desired topping, for example berries, honey, jam, banana or whatever you fancy!
