Banana oat pancakes

I personally struggle to eat porridge in the mornings and I also don’t like the texture of whole banana, so this recipe is perfect for combining those two, highly nutritious ingredients.

Ingredients (makes two pancakes)

  40g oats (unsweetened)

  1 medium banana

  1 medium egg

  Pinch of bicarbonate of soda/baking powder

  Rapeseed oil (not necessary if you have a good non-stick pan)

Method

Combine oats, banana (chopped) and egg in a blender until desired consistency is reached. You can also just mash all the ingredients in a bowl instead of a blender.

Leave for 10-15 minutes to allow the mixture to thicken

In a frying pan heat oil over a medium heat

Pour half the mixture into the centre of the pan, flip once golden brown. If the heat is too high your pancake will burn on the outside and will be raw in the middle. Cook each pancake separately.

Add your desired topping, for example berries, honey, jam, banana or whatever you fancy!

Store in the fridge in an airtight container.
