This recipe is an adapted version of my own recipe for Banana Oat Pancakes. I wanted to create a recipe for higher protein pancakes for a post-workout breakfast or something filling at the weekend.
Ingredients (makes 4 pancakes)
30g chocolate protein powder (I used Linwoods Organic Hemp Protein)
2 tbsp desiccated coconut plus extra for serving
1/2 tsp bicarbonate soda
1 tsp coconut oil (not necessary if you have a good non-stick pan)
Combine oats, protein powder, bananas (chopped), coconut, egg and bicarbonate of soda in a blender until desired consistency is reached. You can also just mash all the ingredients in a bowl instead of a blender.
Leave for 10-15 minutes to allow the mixture to thicken
In a frying pan heat oil over a medium heat
Pour a quarter of the mixture into the centre of the pan, flip once golden brown. If the heat is too high your pancake will burn on the outside and will be raw in the middle. Cook each pancake separately.
Add your desired toppings, for example I went for Jakes Boost Cacaco nut butter fresh raspberries and coconut.
Store in the fridge in an airtight container.
