Do you ever just have one very ripe banana chilling in your fruit bowl? Well I don’t because I don’t really like them too much. My friend did leave one by accident at my house which left me fumbling for ideas on what to do with it before it went off. I decided to create a 1-bread banana bread recipe experimenting with oat flour to make the recipe gluten-free!
Ingredients (makes one small loaf)
1 ripe banana
1 tbsp milk (your choice)
75g oat flour
½ tsp baking powder
Mash banana with a fork in a small bowl, add milk and an egg; give a quick mix then leave to one side.
In a separate bowl cream together butter and sugar, then leave to one side.
Measure the dry ingredients; flour and baking powder into a large bowl and mix together.
Fold in the sugar/butter mixture followed by banana/milk/egg mixture into the dry ingredients bowl; mix until all ingredients have combined. Add mixture to a lined loaf tin (I used 1lb tin).
Bake in the oven at 140C fan oven (or 150C) for 35-40 minutes.
